Recipe: Caldo Verde à moda do Porto


Caldo verde is a typical portuguese dish and is enjoyed by many. Porto Tasty shows you how you can prepare this dish to accompany your meal.

Ingredients:

1 cabbage
2/3 onions
3 cloves of garlic
1 zucchini
1 large potato
1l of boiling water
1 corn Bread
Olive oil
Salt and pepper to taste

Time of preparation: 10 minutes

Preparation Mode: 

First, cut the cabbage into very thin strips. In this caldo verde the cooking of the puree and the cabbage will be done on the side. Then, in a pan you put the onion, the garlic, and the potato, then you will transform it into puree. In a separate pan, bake the cabbage, that you are going to add to the puree. 

In a large pan, cover the bottom with plenty of olive oil and place on the heat. As soon as it is hot, we add the peeled and sliced onions and the chopped garlic. Next, peel the zucchini, cut it into thin slices and add to the braise. The same process is performed with the potato. Season the braise with salt and pepper, let it cook a few more minutes and cover with water. 

Cover the pan, lower the heat, and let it cook slowly. 

On the side, in a pan, boil some water, season it with salt and olive oil and boil the cabbage to use in the caldo verde for 5 minutes. After that, remove the cabbages from the pan, and pass them by cold water so it won’t lose the color and save it until the moment you need to add to the puree. 

With the pan used to cook the cabbages cook the chorizo. It is advisable to cook it separately from the puree so that it does not leave fat bubbles floating in the water of the caldo verde. Let the chorizo cook until everything is finished.

Cook the potato with the onion and zucchini, mash with the magic wand to make a puree. Add the cooked cabbage and stir to coat. The two parts of caldo verde are now together. To serve, in individual bowls, we put some slices of chorizo and the caldo verde.
