Cantina 32: A peculiar cheesecake





In Rua das Flores 32, we find one of the most requested restaurants in the city of Porto: Cantina 32.
An unusual place, its ambience reminds us more of a house than a restaurant. Classical decoration, restored furniture and exquisite taste, for wood and marble.

Beneath the wooden shingles and dim light, we can find one of the house's special desserts: caramelized banana and chocolate cheesecake.

The first impression of this original dessert was one of confusion: "I'm sorry, we ordered a cheesecake, what did you bring us?" The response of one of the waiters (who wore a peculiar denim apron) surprised us: "The best recipes are sown, spoiled, and served. Try it."


After inserting the spoon inside, we discovered that the vase was our dessert. However, it was not an ordinary cheesecake. The order of elaboration was the inverse: caramel in the bottom, the mass elaborated with cheese and with a peculiar touch of banana and, in the superior part, the wafer. This one, which was ground, perfectly simulating the soil that supported an edible plant, which began to germinate from the dish.

The caramel, with a spongy texture in the bottom of the vase, was perfectly attached to the soft body of cheese and banana, making it compact with the cake, not being thick. The contrast between the creaminess of the cake and the crumbled biscuits makes it a taste you want to repeat.
So, after a full menu with entry and second dish, you should leave room for this delicious dessert, which is only € 3.5.

For this purpose, we reveal the essential ingredients: 

Ingredients for 4 pots:
   1 package of digestive cookies or Oreo
   1 banana
   100 grams of butter
   1 tablespoon vanilla sugar
   400 grams of Philadelphia cheese
   100 grams of white sugar
   470 ml of cream
   Gelatin powder
   Curd
   Edible plant for decorating

Preparation: 
1. Grind the cookies until they are powdered.
2. Melt the butter and mix it with the crumbled cookies and a touch of vanilla essence.
3. Caramel Preparation: bake 3 tablespoons of sugar, one tablespoon of water and 1/3 lemon juice. Pour over the bottom of the pot.
4. Cook the cream with the Philadelphia cheese and add the banana in thin slices. Then add the curd and sugar. Bake for 2 minutes.
5. Finally, put the cream over the caramel and then the cookie powder.
6. The dessert should remain at least 4 hours inside the refrigerator.
7. Add the edible plant or flower as decoration.
