Recipe: Cod in the oven with potatoes and Port wine
Ingredients:
4 loins of deep-frozen cod
500 g of potatoes
1/2 chorizo
100 g of spring onions
1 onion
2 cloves garlic
1 dl of Tawny Port wine
1 dl white wine
Chopped parsley
Salt and pepper
Olive oil
First of all, you should put the potatoes with the spring onions in a baking tray, then the chorizo cut into slices, 0,5 dl of olive oil, pepper and salt. Then, water with Port wine and bake in the oven at 150 ºC for 50 minutes.
In another tray, you should put 4 tablespoons of olive oil, the sliced onion, the crushed garlic and the cod. Next water with the white wine and bake in the oven about 40 minutes. Remove from the oven, dispose the cod in the serving dish with the potatoes.
